Christmas Cards

Last night Justin and I had a fun evening addressing Christmas cards while we watched I’ll be Home for Christmas. Do you all remember that movie? The entire thing screams 90s from the clothes to the pagers to the fact that Jonathon Taylor Thomas is the lead.

I was eight years old when this movie came out and now this movie is 15 years old. I’m feeling a little old right now! 

Turns out Justin and I had never seen the movie and it was the perfect brainless background to addressing cards. Unfortunately, my cards were missing 15 envelopes, so we still have a few to do, but we did get the bulk out of the way and will finish when the envelopes arrive.

My father in law called while we were addressing them and I told him what we were doing. He laughed and said I was ahead of everyone and especially him since he doesn’t send cards. I sort of feel like this is the new norm. Between the ability to keep up with people with technology and the rising price of postage, I think like a lot of people skip the cards.

I simply cant resist. I think its the newlywed in me; last year I could not wait to send them out and this year was no different!

Christmas 2013 Bucket List

Happy Cyber Monday! Did you find any really good deals? As a bargain shopper, I love Black Friday and Cyber Monday, but I didn’t find anything I couldn’t live without, so no shopping for me!

I am borrowing an idea from Julie and making a holiday bucket list. Justin and I always talk about the fun things we should do during the Christmas season and then we blink and its over. I want to savor as much time together during this hectic, yet wonderful time of the year (and especially before we go back to Texas for a crazy busy 2 weeks)!

Thanksgiving 2013

Happy Belated Thanksgiving! Since Justin and I live so far from our families we opted to stay in North Carolina again this year. One of my best friends from college, Hannah moved to Winston Salem for grad school. We had Thanksgiving with Hannah and a good friend Sean, who is in Justin’s class at Wake Law.

We had Thanksgiving with a couple of friends. I made stuffing, spinach salad, chocolate bourbon pecan pie and pumpkin pie. We also brought a smoked turkey and a variety of cheeses.

We enjoyed cheese and crackers as well as a delicious avocado, tomato and bean dip that Hannah made for appetizers.Around 3pm we sat down to eat. Justin had the honors of carving the turkey for the first time! Typical me, I had to capture it in pictures 🙂

He did a great job! After the turkey was carved, we sat down to enjoy our feast of smoked turkey, stuffing, mashed potatoes, bacon glazed carrots, green bean casserole and spinach salad.

After lunch we played a few rounds of Euchre, a midwestern card game that our friend Sean taught us how to play.  We switched to spades around 7pm and ended up playing until the early hours of Friday morning!     tgiving2 I hope you had a blessed Thanksgiving!

Hanging Rock

One of the things we have enjoy about North Carolina is its close proximity to everything. We are close to the mountains and the beach. Its nice not being as landlocked as we are in Texas, where you drive 8 hours to get to the beach or the mountains and even more to get out of the state!

A few weeks ago we made a trip to Hanging Rock, a mountain state park about an hour from where we live. The park has a ton of trails that lead to different parts of the mountain and we could have spent all day (or days) exploring them.

ImageWe picked three trails to explore: Hanging Rock, Upper Cascade Falls and Window Falls.

Hanging Rock was the longest but the views were BEAUTIFUL!

We ate lunch at the top of the mountain and took lots of pictures!

This view would be even more gorgeous right now since all the leaves have changed. Justin and his friend Sean went back a few weeks ago to complete the peak challenge, which was 11 miles. I think they enjoyed it!

Pumpkin Party

Hello! Everytime I say I am going to be better about blogging, you should probably not believe me. I think I have some idea in my head of what my blog needs to be like, but really this is supposed to document our newlywed lives as well as update far away family! So, I will try to be better about it.

A couple of weeks ago we had a few people over for a Pumpkin Party! I made pumpkin muffins, everyone brought their favorite fall beer and we carved pumpkins. Interestingly enough, in the almost 5 years that Justin and I have been together, we have never carved a pumpkin together!

Pumpkin carving has changed a lot from when I was little.  It used to be fairly simple and involved some triangles for eyes and a mouth.

Compare this to a pumpkin I saw on Facebook that was carved into the shape of a baby in the womb. Everyone is carving super elaborate pumpkins these days. Unfortunately, I lack most artistic skills, so Hannah drew a longhorn on our pumpkin and Justin and I carved it. Super original, I know.

Pumpkin Season 2013: The Easiest Pumpkin “Muffins” You’ll Ever Make

Happy fall y’all!

Fall is my favorite season. It makes me very nostalgic for my childhood! I think of starting school, cooler weather (well,maybe it was more of a dream in Texas!) and pumpkin everything. The last part is what really excites me, I love pumpkin. My mom makes the best pumpkin bread/muffins in the world and every time fall rolls around I want nothing but a warm slice of that pumpkin bread!

Fall also means that “holiday” season has started. Halloween will be here before we know it, then Thanksgiving and then Christmas. The fall always seems to fly by.

Justin has dubbed fall Pumpkin Season 2013 as I have been going a little crazy with the pumpkin. But, I ask can you ever have too much pumpkin? Its really only appropriate to each in the fall, so you have to get in as much as possible!

I haven’t made any of my mom’s pumpkin bread yet, because I need an occasion that calls for baked goods. We do not need ane entire loaf of pumpkin bread around! However, I have been dying to try the recipe that requires a can of pumpkin and a box of cake mix. While not necessarily healthy, I know that without the eggs and oil and the addition of the pumpkin, they are a lot better for you!

I decide to give them a little something extra and added oatmeal and dark chocolate chips.

The Easiest Pumpkin “Muffins” You’ll Ever Make

1 box Spiced Cake Mix (I used Duncan Hines because thats what my Momma uses!)

1 can pumpkin (not pumpkin pie filling and like Momma I used Libbys)

1 1/4 cup water (can use a little more if its too thick)

1/2 tablespoon cinnamon (optional- I love spices)

3/4 cup oatmeal

1/2 cup chocolate chips (optional)

1. Combine first 3 (4 if you are adding cinnamon) ingredients in mixer. Blend for 2 minutes

2. Stir in oatmeal and chocolate chips

3. Pour 1/4 cup into muffin pan. Follow baking instructions on back of cake mix.

A Pinterest Win: 1st Anniversary Photos

Can you imagine what our lives would be like if they even remotely matched Pinterest? Maybe I am in the minority here, but I feel like my Pinterest life is very different from reality. I pin lots of great recipes, decorations, outfits and ideas but I feel like I never follow through with them!

I am pleased to say that I can cross something off my “Pinterest to-do list,” because we took 1st  Anniversary Photos and I am in love!

I vowed to take anniversary photos after I saw this adorable photo prior to us even getting married:

So cute, right? I thought it would be sweet to take a picture every year with the chalkboard to show how we change (and get older…). Since I am normally a failure at following through on my Pinterest ideas I promised myself this would happen! We asked a friend who is wonderful photographer to snap some photos of us around the Wake Forest campus. I figured what is more appropriate to capture our first year of marriage than where my husband goes to law school?

I am looking forward to printing a couple to put around our house. Right now it seems like all we have are wedding photos. And its a little much!
